How is your summer going, my friends? We’ve been enjoying every single minute of ours. I don’t know about you, but when it’s super warm outside, the last thing I want to do is heat up my kitchen by turning on the oven. That’s why I LOVE this super easy and delicious spaghetti salad with homemade italian dressing. You can make it start to finish in about half an hour and you’re going to love it!
To make this fabulous spaghetti salad, first you are going to need to make up some of my favorite italian dressing. You’ll need a packet of italian dressing seasoning, (you can get this at most grocery stores), some red wine vinegar, water, and some European Extra Virgin Olive Oil, I used Zucchi brand oil in this recipe. They’ve been making Olive Oil for 200+ years, so you know it’s good!

I always like to go with an Extra Virgin Olive Oil, because it’s made by pressing, without heat or chemicals. This makes it fresher and more pure than other olive oils. - 1/4 Red Wine Vinegar
- 1/2 Cup European Extra Virgin Olive Oil (I use Zucchi EVOO)
- 3 Tablespoons of water
- Packet of Italian Dressing Seasoning
- 1/2 Lb. Spaghetti Noodles
- 1 Small Cucumber
- 1/2 Cup Cherry Tomatoes
- 1 Small Can Sliced Olives
- To make the dressing Combine all ingredients in a mason jar, and shake-shake-shake!
- Cook the noodles according to the package, then drain and rinse in cold water.
- Combine the rest of the ingredients and mix them all together.
When your pasta is ready, drain it and rinse it with cold water. Combine all the ingredients and mix it all up. It’s absolutely enough to share (but you won’t want too) and easy to double if you want more… it will keep in the fridge for a few days as well and it would be PERFECT to take to a pot luck!
Also, the dressing on it’s own is fabulous on a salad!
