[H]ey there, friends! One of my favorite traditions in our family is our regular Friday Night Movie Night, I started doing this with the big kids before Karter was even born. We all look forward to it every week. Generally we do pizza for dinner, and I make a movie themed snack. Last week we watched Illumination Entertainment’s Minions, after it was released December 8, so I made these super fun and easy Choco-Banana minion Whoopie Pies!
In preparation for last weeks #MinionsMovieNight, I picked up a copy of the Blu-Ray/DVD Combo pack, you can get yours from the Minions movie website, and gathered everything I would need for our Choco-Banana minion Whoopie Pies!
Start with a yellow cake mix, this can be boxed, I won’t tell. Or here is the recipe I use:
- 2 cups all-purpose flour
- 1 1⁄2 cups granulated sugar
- 3/4 tablespoon baking powder
- 1⁄2 cup non-fat powdered milk
Then add the wet ingredients
- 3 eggs
- 1 tsp Banana Extract (More or less depending on how ba-na-na-ish you want your cakes to be)
- 1/2 Cup of Vegetable Oil
- 1/2 Cup Water
Mix all the ingredients together and pour into the cavities of a Whoopie Pie Pan. Bake at 400 for about 8 minutes, note that they do expand a lot, so you’ll want to think about that when filling the cavities, or you’ll have overflow.
While they’re baking you can whip up some chocolate frosting:
- 1 stick butter, softened
- 3 Cups powdered sugar
- 1/2 Cup Cocoa powder
- 1 tsp vanilla
- 5-8 Tbsp half & half (or milk)
Just whip the butter and vanilla together until smooth, pour in the cocoa, and slowly add in the powdered sugar, add in the half & half or milk until you get to your desired consistency.
Then you just add your chocolate frosting, and make them into sandwiches, use more frosting and candy eyeballs to make the minion’s goggles! Fun, simple, cute, and easy!

They were a huge hit, the kids just loved them. Karter literally couldn’t wait to get his hands on them, and he grabbed one during my shoot. We loved Minions © 2015 Universal Studios All Rights Reserved, it’s so funny. We especially liked that they spent so much time in England, as you may or may not know, we lived there for three years, and my Kaylee was born there.
